Sweet Potato, Coconut and Curry Soup

A tasty winter warmer

10 mins preparation

20 mins cooking time

1 pot washup

  • 1 tab olive oil
  • 1kg Sweet Potato
  • 2 garlic cloves
  • 1 onion
  • 3 teas curry paste
  • 1 green apple
  • 1 litre chicken stock
  • 270ml coconut cream
  1. Heat olive oil in heavy based pot
  2. Fry chopped onion, garlic and curry paste until golden and fragrant
  3. Peel and chop into chunks, sweet potato and apple, place in pot
  4. Add chicken stock to pot
  5. Bring to boil and simmer 20 minutes, until tender
  6. Cool a little and blitz in food processor, in batches until smooth and combined
  7. Stir in coconut cream
  8. When reheating, do not boil as this will curdle the coconut cream
  9. Season and serve with crusty bread
